today was very special day for me and A. for we both have a lot to thank the Lord Jesus Christ as He showered us with so many blessings! :)
first i already completed and submitted my requirements to my "future" medschool and A's thesis defense was approved! yey for the Lord! for He is good!

we celebrated by eating our favorite food in the world, pizza!☺ we dined in Pizza Hut located at the newly opened wing of Glorietta, our usual go-to place. 

OUR MEAL:
-Caesar's Salad
-Chicken Tenders- these come with their special bbq sauce and fries
-3-Cheese Pizza
-a pitcher of House Blend Iced Tea

we really enjoyed the meal just because its pizza and each other's company.♥

another great thing that happened tonight was having a conversation with a very intellectual man whom we all consider as a father, for his insights were a compilation of very well pondered sense of reason and psyche. 

hearing him speak about his philosophy will just amaze you, fills you with wonder and awe. its just such a blessing to know him but more of such blessing hearing his catechism and lectures. 

he just told me a little while ago what saying i love you really supposed to mean. 

"I LOVE YOU BECAUSE I AM."

it can be summarized in the 1st paragraph of Ray Croft's quote. 
i am me when i am with you. i can be ME when i am with you.
YOU COMPLETE ME. 
a very beautiful though to reflect on. to evaluate oneself.
to think about how our relationships with other people are.

being affirmed or receiving affirmation from others is how to define your REAL being! you may say that nobody knows yourself but you alone however ask yourself if that is the true/real you? how do you know that your voice is real pleasant? or are you really that beautiful? 
you may know that you have a nice voice or pretty but is that the same way others think about you?

loving another person is simple as that you are being introduced to your real self. your TRUE self by that person you love. :') and you in turn is doing the same thing for him or for her.
touchingly beautiful!

these are just things that i had a very nice night to reflect upon on. just sharing these with you, dear visitors and readers!

what's been cookin'? :)


hello! :) 

its been too long since i've posted some of the food my dad made.

if you guys missed this part of my blog then its your lucky day for i will be unveiling more of daddy leo's delicious home cooked meals. 

DISH no. 1 "Baked Chicken ni Lola Ganda"

-this was my lola ganda's (daddy leo's mom) recipe. 
-it includes baked chicken and macaroni in rich creamy white sauce topped with cheddar cheese. 
-served with toast bread and iced tea.




 DISH no. 2 "Beef Burger and Chef Leo's Salad"

-made from lightly seasoned grounded beef patty.
-for the salad there are lettuce, onions, tomatoes, and sweet corn kernels.
-the salad dressing was from Japan, a savory sesame salad dressing.

(look how happy we are! :))

DISH no. 3 "The Long Awaited Lasagna"

-we have been planning to make this dish for almost a decade. :) now it became a reality.
-its made from lasagna (pasta), layered with red meat sauce, bechamel sauce, and slices of MOZZARELLA cheese! *yahoooo! topped with more mozzarella and baked in the oven.



DISH no. 4 "Nachos"

-this is a simple recipe made from tortillas, chili, onions, pickles, and cheese! :)



DISH no. 5 "Pata-tim" 

-is a delicious meal made from pork hind leg (pata), mushrooms, baby corn, pechay in thick yummy sauce.



DISH no. 6 "Spicy Gambas"

-i was the one who actually made this dish in supervision of my dad. :)
-its made from mainly shrimp and the sweet-spicy gambas sauce.



i hoped you've enjoyed looking at our dishes because these were made from love. :)

raiders part 2


my brother had typhoid and dengue last week. he was confined to St.Claire Medical Center for a number of days. while he was recovering my "raider" friends decided to pay him a little visit. :)

Kai went home after a couple of days and is now very much alive and kickin'! :)

REMEMBER: Salmnonella typhi is the bacteria that causes typhoid, avoid food that are not cooked well and through (especially chickens). 

cut your nails and please make it a habit in washing your hands first before eating. :)

happy independence day my fellow Pinoys!


since this is the day of our freedom, daddy decided to make something special: SPARE RIBS and BBQ PORKCHOPS with BAKED GARLIC POTATOES AND CARROTS and CORN. plus his bbq maple syrup completes the meal.

cooking with daddy leo edition 3


Eating is really one of your indoor sports. You play three times a day, and it's well worth while to make the game as pleasant as possible.
daddy did it again. :)


this is his version of Pork Chop ala Lechon, with ampalaya (bittermelon).

how to make: YORKSHIRE PUDDING

hey foodie! :)


Yorkshire Pudding is a dish from (where else? haha) YorkshireEngland. It is made from a batter and usually served with roast meat and gravy.


don't be scared of the name. its so easy to make. i just learned how to make it this morning :D


what you need: 
  1. 1 cup of Pancake mix or 1 cup of all purpose flour- in our case we mixed the two of them together because using only the pancake mix makes it too sweet while the flour makes it bland.
  2. 2 eggs
  3. milk
  4. salt for tasting
  5. butter or lard or margarine- we used butter
  6. olive oil (optional)
  7. a bowl, a whisk
  8. aluminum muffin cups or muffin trays
  9. an oven 250C 
steps:

IMPORTANT: pre-heat the oven first to 250 degrees Celsius.  we need the oven to be HOT!. :D

1st- mix the Pancake mix and 1 egg in a bowl. mix it. then add milk. 
*the amount of milk depends on what consistency you want your batter to achieve.


2nd- mix the 3 ingredients together with a whisk. add more milk if you want the batter to be "running" 


3rd- set the batter aside and prepare your muffin cups on a tray. 
now you can add butter in each of the cups.
you can also add a dash of olive oil for additional flavor.


4th- put the tray in the oven to heat the cups to 250 degrees.

5th- take the tray out and pour the batter in the hot cups. 
*USE A POT HOLDER. ITS HOT. 


6th- return the tray w/the YP batter in the cups inside the oven for 20 mins.
DO NOT OPEN THE OVEN to peek. wait for 20 minutes. 
the batter might not rise if you open the oven prematurely.

7th- after 20 mins. take the tray out. *tenen! you're done! :O


this pudding is delicious with gravy and roasted meat but you can try it with different variations.

hey guys, just wanna share what our family cooked for today's lunch.


i don't know what to call it but its Roasted Beef with gravy, roasted baby potatoes and carrots (with herbs), sauteed corn and green peas and YORKSHIRE PUDDING! :)

cooking with daddy leo edition 1

good pm guys! :)

FYI: last month my mama has started to work for a real estate company in Timog. since then she has been very busy from morning 'till night. usually mama's cooking lunch and dinner but for now that task was passed on to daddy leo, the chef. :O

today we cooked this dish: bland boiled chicken plus savory sauce made from olive oil, soy sauce, vinegar and chives and onion. oh! plus a little ginger and sugar. 



adding daddy Leo-style Yang Chow rice and homemade Chop Suey....hmmm...yummmy!!!!
